Brut or brut nature: what actually changes inside the bottle
The difference between a brut and a brut nature is not price or prestige: it is a few grams of sugar added at the very end. Here is when each one makes sense.

Someone asks us this in the tasting room every week, usually with a glass already in hand: is brut nature better than brut? The short answer is no. The long one is worth having.
The dosage liqueur
A cava goes through its second fermentation inside the bottle with the yeast still in it. Once that yeast has done its work, it is collected in the neck and frozen so it can be expelled: that is disgorging. At that moment the bottle loses a few millilitres, and it has to be topped up.
Topped up with what? With what we call the dosage liqueur: wine from the same house, carrying more or less dissolved sugar. That decision, which takes three seconds on the bottling line, is exactly what separates a brut from a brut nature.
The sugar bands
The rules set the bands per litre:
- Brut nature — under 3 g/l, and no added sugar. What little is there comes from the wine itself.
- Extra brut — up to 6 g/l.
- Brut — up to 12 g/l.
- Extra dry, dry, semi-dry, sweet — upwards from there.
For context: a cola drink carries around 100 g/l. Even a sweet cava sits far below that. We are talking about nuance, not syrup.
What the sugar does
Sugar does not sweeten, it rounds. A few grams soften the acidity, cover the edges and make the cava friendlier from the first sip. That is why a brut is liked immediately by almost everyone.
A brut nature has no such cushion. The wine stands there undressed: if the base wine was mediocre, you notice; if it was good, you notice even more. It is tauter, drier, and often needs two or three sips to open up.
When we open each
At home we use a simple rule.
Brut nature with salty, fatty food. Anchovies, oysters, cured ham, aged cheese, anything fried. The clean acidity cuts through the fat and resets your palate for the next bite. Our Cava Brut Nature Orgànic is built for precisely that.

And one exception that surprises people: brut nature with dessert does not work. There the sugar on the plate collides with the dryness of the wine and leaves it sour and short.

When someone arrives unsure, we pour both from the same range, at the same temperature, and let them decide. Brut nature wins roughly one time in two. There is no right answer; there is yours.
